Some countries are now requiring specific COVID coverage for visitors to their countries regardless of vaccination status. Some countries waive insurance requirements for those who are fully vaccinated (note that the definition of "fully" vaccinated changes over time).
Some countries have threatened to close their doors to unvaccinated travelers. So, travel during COVID is a bit more challenging than before, but not impossible. Furthermore, a growing number of travelers from the US are wanting to be sure that some sort of "quarantine" coverage is on their policies. At the current time, the US requires a negative COVID test to return to the US (that is, to get on the plane to return home). So, if you test positive, you will then be forced into quarantine or isolation for some days until you can test negative (hopefully, 5 days, but can be longer and may depend on your host country).
